Very, Very Banana-y Banana Bread

Serves: 4 mini loaves or 1 large loaf
This banana bread is moist and delicious and full of banana flavor. Great for using up overripe bananas. It's great toasted for breakfast.
  • ½ cup margarine or butter
  • ¾ cup brown sugar
  • 2 eggs
  • 2⅓ cup mashed overripe bananas
  • 1 tsp. baking soda
  • ¼ tsp. salt
  • 2 cups flour
  • ⅓ cup chopped walnuts or mixed nuts (optional)
  1. Preheat oven to 350 degrees. Lightly grease four mini loaf pans or one 9 x 5 loaf pan.
  2. In a large bowl, cream together margarine and brown sugar.
  3. Mix in eggs and bananas until well blended.
  4. Stir in the baking soda, salt and flour but do not over mix.
  5. Stir in nuts.
  6. Divide batter between four mini loaf pans if using those or pour all into large loaf pan.
  7. Bake in preheated oven 45-50 minutes for mini loaves or 60-65 minutes for large loaf pan or until a toothpick or cake tester inserted in the middle comes out clean.
  8. Let bread cool in the pan for 10 minutes, then turn out onto a wire rack.
